Ingredients:

  • 3 sweet potatoes
  • 2 cans of black beans
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 16 flour tortillas
  • 24 ounces colby-monterey jack cheese

Instructions:

  1. Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash the sweet potatoes and pat them dry. Pierce each potato several times with a fork. Place them on a baking sheet and bake for 45 minutes to an hour, or until they are soft and tender. Once baked, allow them to cool thoroughly.

  2. Prepare Ingredients: While the sweet potatoes are baking, shred the colby-monterey jack cheese and set it aside. Drain and rinse the black beans.

  3. Mash Sweet Potatoes: Once the sweet potatoes have cooled, peel off the skin and place the flesh in a large mixing bowl. Add the drained black beans, cumin, and garlic powder. Use a fork or potato masher to mash everything together until well combined.

  4. Assemble Quesadillas: Lay out your flour tortillas on a clean work surface. Spread approximately 3/4 cup of the sweet potato and black bean mixture evenly over one tortilla. Sprinkle a generous amount of shredded cheese on top, then place another tortilla on top to form a quesadilla. Repeat this process until all of the sweet potato mixture is used, creating a stack of quesadillas.

  5. Bake Quesadillas: Preheat your oven to 350°F (175°C). Lightly grease two large baking sheets with cooking spray. Carefully transfer the assembled quesadillas onto the prepared baking sheets. Place them in the oven and bake for 10-15 minutes, or until the cheese has melted and the tortillas are crispy.
