Ingredients:
- 3 sweet potatoes
- 2 cans of black beans
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 16 flour tortillas
- 24 ounces colby-monterey jack cheese

Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash the sweet potatoes and pat them dry. Pierce each potato several times with a fork. Place them on a baking sheet and bake for 45 minutes to an hour, or until they are soft and tender. Once baked, allow them to cool thoroughly.

Prepare Ingredients: While the sweet potatoes are baking, shred the colby-monterey jack cheese and set it aside. Drain and rinse the black beans.
