4 Boneless chicken breasts
1 1/2 Butter
1 Tomato
1 Green onion
1 Green bell pepper
1 Yellow bell pepper
1 Red bell pepper
1 Fresh mushrooms
1 Onion
2 Garlic cloves
1 Chili powder
1 Cumin
1 Cayenne pepper
1 1/2 Cheddar cheese
1 Jalapeno jack cheese
2 Ripe olives
2 Green olives
1/4 Salt
1/4 Black pepper
1/4 White pepper

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit.

  2. Cook Chicken: In a pan, melt half of the butter over medium heat, then add the chicken cubes. Cook for approximately 4 minutes until the chicken is lightly browned and cooked through.

  3. Prepare Cheese Mixture: In a bowl, mix together the grated cheddar and jalapeno jack cheeses.

  4. Sauté Vegetables: In a large skillet, melt the remaining butter. Sauté the onions, mushrooms, and bell peppers until they are softened and aromatic.

  5. Prepare Sauce: In another bowl, combine the cream of chicken soup, cream of mushroom soup, chicken broth, minced garlic, salt, black pepper, white pepper, chili powder, and cumin. Mix until well combined.

  6. Incorporate Tomatoes: Add the diced tomatoes to the sauce mixture and stir until evenly distributed.

  7. Layer Ingredients: Spray a large casserole dish with non-stick spray. Begin layering the ingredients as follows:

    • Start with a layer of tortillas at the bottom of the dish.
    • Add a layer of cooked chicken cubes.
    • Spoon a portion of the sauce mixture over the chicken.
    • Sprinkle a portion of the mixed cheeses over the sauce.
    • Add a layer of sliced olives.
    • Repeat the layers until all ingredients are used up, ending with a final layer of cheese on top.
  8. Bake: Place the assembled casserole dish in the preheated oven and bake for 25 to 35 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.

  9. Serve: Once baked, remove the Texas Chicken Pie from the oven and allow it to cool slightly before serving. Slice into portions and serve hot, garnished with chopped green onions or fresh cilantro if desired.
