Ingredients:
- 2 1/2 baking potatoes
- 1 1/2 tsp salt
- 4 tbsp unsalted butter
- 4 green bell peppers
- 1 green onion
- 8 – 10 cloves garlic
- 3 tbsp pimientos
- 4 tbsp flour
- 1/3 cup evaporated milk
- 2 cups cheddar cheese
Instructions:

Prepare Potatoes:
- Cover the potatoes with water in a pot.
- Add the salt and cook over medium heat for 30 minutes.
- Drain the potatoes and let them cool. Once cooled, thinly slice them.

Preheat Oven:
- Preheat the oven to 350°F (175°C).

Prepare Sauce:
- In a saucepan, melt the butter over medium heat.
- Saute the bell pepper, green onion, and garlic until they become soft.
- Add the pimientos, jalapenos, and jalapeno liquid.
- Sprinkle with flour and stir until combined.
- Slowly add the evaporated milk, stirring constantly.
- Let the mixture thicken while stirring continuously.
- Remove from heat and mix in the cheddar cheese until melted and well combined.

Assemble and Bake:
- Grease a baking dish.
- Layer the sliced potatoes and sauce in the greased baking dish.
- Sprinkle with a little paprika if desired.
- Cover the dish with foil and bake for about 1 hour, or until the potatoes are tender and the sauce is bubbling.
