Ingredients:

  • 1 lb lean ground beef
  • 1/4 cup water
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 oz cream cheese
  • 1 cup corn kernels
  • 3 tomatoes, diced
  • 8 green onions, sliced
  • 4 tbsp sour cream
  • 1 cup shredded lettuce
  • 1 cup sliced olives
  • 2 cups shredded cheddar cheese
  • 1 package taco seasoning mix
  • Fritos chips (chili flavored or plain), crushed
  • Taco sauce

Instructions:

Step Description
1 Brown the ground beef: In a skillet, brown the ground beef with diced onions and minced garlic until fully cooked.
2 Add seasoning and sauce: Once the beef is browned, add the taco seasoning mix, water, cream cheese, corn kernels, half of the sliced olives, and taco sauce to the skillet. Let it simmer for 3 to 4 minutes, allowing the flavors to meld together.
3 Layer the casserole: Preheat the oven to 375°F. In an 8×12 casserole dish, create layers by starting with half of the crushed Fritos chips, followed by half of the meat filling, and then half of the shredded cheddar cheese. Repeat the layers one more time. Top the casserole with the remaining sliced olives.
4 Bake: Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
5 Serve: Once baked, remove the casserole from the oven. Serve hot, and optionally top each serving with shredded lettuce, diced tomatoes, sliced green onions, and a dollop of sour cream.
