Ingredients:

  • 1/2 potato
  • 1 tbsp butter
  • 1 egg
  • 3/4 cup plain flour
  • Pepper, to taste

  • 1 cup tomato sauce
  • 1 cup crushed tomatoes
  • 1 onion
  • 1/2 tsp oregano
  • 1/4 red capsicum
  • 1 garlic clove
  • 1/4 tsp allspice
  • Salt, to taste
  • 1 cup cheddar cheese
  • 1/4 cup parmesan cheese

Instructions:

  1. Prepare the Gnocchi Dough:
    • Start by mashing the potatoes and adding salt, pepper, butter, and egg, then mix well until combined.
    • Gradually add the flour to the potato mixture, stirring continuously until it forms a consistent dough. A helpful tip: test the dough’s readiness by forming a small ball – if it holds its shape without breaking apart, it’s ready. Alternatively, place a small ball of dough in boiling water; if it floats fairly quickly without breaking, it’s ready.
  2. Shape the Gnocchi:
    • Dust a work surface with flour and take a portion of the dough, roughly the size of a golf ball. Roll it into a long sausage shape, about 0.375 inches or 10mm in diameter.
    • Use a knife to cut the dough into pieces approximately 3/4 inch or 15mm in length. Ensure the pieces are separated to prevent them from sticking together. Repeat this process with the remaining dough.
  3. Cook the Gnocchi:
    • Bring a large pot of water to a boil. Carefully drop the gnocchi into the boiling water, making sure not to overcrowd the pot. Cook the gnocchi in batches if necessary.
    • Once the gnocchi float to the surface, allow them to cook for an additional 30 seconds, then remove them using a slotted spoon and transfer them to a colander. Rinse them briefly under cold water to stop the cooking process.
  4. Prepare the Tomato Sauce:
    • In a separate saucepan, combine the tomato sauce, crushed tomatoes, finely chopped onion, minced garlic, diced red capsicum, oregano, allspice, and a pinch of salt. Cook the sauce over medium heat for about 25 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.
  5. Assemble and Bake:
    • Preheat your oven to 120Β°C (250Β°F).
    • Arrange the cooked gnocchi in a baking dish and pour the prepared tomato sauce over them, ensuring they are evenly coated.
    • Sprinkle grated cheddar cheese and parmesan cheese on top of the gnocchi and sauce.
    • Place the baking dish in the preheated oven and bake until the cheese is melted and bubbly, about 10-15 minutes.
  6. Serve:
    • Once the cheese is melted and golden brown, remove the baking dish from the oven. Serve the gnocchi in tomato sauce hot, garnished with fresh basil leaves if desired.
