Muffin Tuna with Cheddar Surprise

Ingredients

Canned tuna 1 can (drained)
Unsalted butter 100 grams
Stevia sweetener 3 packets
Baking soda 1 teaspoon
Baking powder 1 teaspoon
Himalayan salt A pinch

Eggs 2 large
Filling:
Cheddar cheese block 1/2 block, cut into small cubes
Topping:
Grated cheddar cheese To taste

Instructions

  1. Prepare Ingredients A:
    In a mixing bowl, combine all-purpose flour, canned tuna, unsalted butter, stevia sweetener, baking soda, baking powder, and Himalayan salt. Mix thoroughly until the ingredients are well blended.

  2. Prepare Ingredients B:
    In a separate bowl, whisk together the yogurt and eggs until smooth and consistent.

  3. Combine Ingredients:
    Slowly add Ingredient B mixture into Ingredient A, gently stirring until fully incorporated and smooth. Avoid over-mixing to keep the muffins tender.

  4. Add the Cheese Filling:
    Fold in the cubed cheddar cheese, ensuring even distribution for delightful cheese pockets in each muffin.

  5. Prepare for Baking:
    Spoon the muffin batter into muffin tins, filling each about three-quarters full. Sprinkle the tops with grated cheddar cheese to create a savory, golden topping.

  6. Bake:
    Place the muffin tin in a preheated oven at 160°C (320°F) and bake for approximately 50 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
