Instructions

  1. Prepare the Baking Dish
Begin by greasing a 7-inch baking dish with butter. Preheat your oven to 180°C (350°F).

  2. Sauté the Vegetables
Heat the extra virgin olive oil in a small pan. Add the chopped onion and minced garlic, and sauté for about 1 minute until the onions become translucent.
Add the chopped button mushrooms and cook them until they begin to sweat and release moisture.
Toss in the grated zucchini, grated carrot, chopped red bell pepper, and spinach leaves. Season with salt and 2 teaspoons of black pepper (or red chili flakes, if you prefer some heat). Stir the mixture well and let it cook for 3-4 minutes until the vegetables soften.
Remove the pan from the heat and sprinkle in your fresh thyme (or any herbs of choice). Give it one last stir to combine.

  3. Assemble the Sandwiches
Butter the slices of whole wheat brown bread. Spread a thin layer of Dijon mustard on each slice.
Take about 1-2 tablespoons of the vegetable mixture and spread it on each slice of bread, then top with some grated cheddar cheese. Place another slice of bread on top to form a sandwich. Cut each sandwich diagonally into 4 triangles.

  4. Layer in the Baking Dish
Arrange the sandwich triangles in the greased baking dish, placing them vertically with the cut edges down.
Scatter any leftover vegetable mixture over the bread slices to ensure an even distribution of flavors.

  5. Prepare the Custard
In a small mixing bowl, whisk together the lightly beaten eggs and milk. Add a pinch of salt and whisk until fully blended.
Pour this egg-milk mixture over the arranged sandwiches, making sure it soaks into the bread. Sprinkle extra cheddar cheese, herbs, and a dash of black pepper on top.

  6. Bake the Savory Bread Pudding
Place the baking dish in the oven and bake for 18-20 minutes, or until the custard sets and the top is golden brown.
Be mindful not to overbake, as this can dry out the pudding. If you notice the top is browning too quickly, cover the dish with aluminum foil to prevent it from burning.

  7. Serve
Once the savory bread pudding is done, remove it from the oven and let it rest for a few minutes. Serve it hot, paired with a refreshing Lavender Lemonade Cooler and finish off with a delightful Eggless Choco Lava Cake for dessert.

Tips and Variations

  • Bread Choice: While whole wheat bread is used here, you can substitute it with other types like sourdough, multigrain, or even a crusty baguette for a different texture and flavor profile.
  • Cheese Varieties: While cheddar cheese works wonderfully in this dish, you can try swapping it with mozzarella, gruyère, or a combination of your favorite cheeses for a unique twist.
  • Vegetable Variations: Feel free to use any leftover vegetables in the fridge—broccoli, cauliflower, or even peas can be excellent additions.
  • Vegan Version: Replace the eggs and milk with non-dairy alternatives, such as plant-based milk and a vegan egg substitute, and use dairy-free cheese for a fully vegan version.

This Savory Bread Pudding is a warm, filling dish that is perfect for those cozy, cool evenings when you want something satisfying but not too heavy. It is also an excellent way to use up leftover bread, making it both economical and delicious! Whether you enjoy it as a main course or as a side dish to complement your meal, it’s sure to be a hit with family and friends alike.
