Instructions

Step 1: Preparing the Dough

  1. In a large mixing bowl, combine the whole wheat flour, active dry yeast, sugar, and salt. Mix them thoroughly.
  2. Gradually add water, little by little, to form a smooth dough. Knead the dough for about 5 minutes until it is soft and elastic.
  3. Drizzle the extra virgin olive oil over the dough and knead again for a few more minutes until the dough is smooth and shiny.
  4. Cover the dough with a clean kitchen towel and set it aside in a warm place to rise for about 1-2 hours, or until it doubles in size.

Step 2: Preparing the Stuffing

  1. While the dough is rising, heat a tablespoon of oil in a heavy-bottomed pan over medium heat.
  2. Add the finely chopped green bell pepper (capsicum) and finely chopped carrots to the pan. Sprinkle in a pinch of salt and sauté the vegetables until they are tender and slightly caramelized, about 5-7 minutes.
