Ingredients:

  • 16-24 button mushrooms
  • 1 1/2 cups herb-seasoned stuffing mix
  • 1/2 cup boiling water
  • 1/3 cup wild rice
  • 3/4 cup mozzarella-provolone cheese blend

Instructions:

Step Description
1 For the wild rice, place it in a colander and rinse under cold running water.
2 Place the rice in a small saucepan and cover with 1 cup of water.
3 Bring to boiling and reduce the heat. Cover and simmer for about 50 minutes or until the wild rice is very tender. Add more water if needed during cooking. Drain off any excess liquid and measure out 1 cup of wild rice.
4 Rinse and drain the fresh mushrooms. Remove and discard the stems, reserving the mushroom caps.
5 For the stuffing, in a medium mixing bowl, stir together the stuffing mix and boiling water. Stir in the cooked wild rice and cheese until well combined.
6 Pile the stuffing into the mushroom caps, ensuring they are evenly filled.
7 Arrange the stuffed mushrooms in a 15x10x1-inch baking pan, making sure they are not overcrowded.
8 Preheat your oven to 375ยฐF (190ยฐC).
9 Bake the mushrooms, uncovered, in the preheated oven for 10 to 12 minutes or until heated through and the cheese is melted and bubbly.
