Ingredients:

  • 1/2 cup butter
  • 1/3 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 egg
  • 2 tablespoons kirsch
  • 1 cup all-purpose flour
  • 2 tablespoons milk
  • 1/4 cup chopped bittersweet chocolate
  • 1 tablespoon shortening
  • 1 cup chopped almonds, divided

Instructions:

  1. Line a cookie sheet with foil and set aside.
  2. In a large mixing bowl, beat butter with an electric mixer on medium-high speed for 30 seconds.
  3. Add brown sugar, baking powder, and salt. Beat until combined.
  4. Beat in the egg and kirsch until well combined.
  5. Gradually add the flour to the mixture, using the mixer until possible, then switch to a wooden spoon to incorporate any remaining flour. Stir in 1/4 cup of chopped almonds.
  6. Divide the dough in half and shape each half into a log on the prepared cookie sheet. Flatten each log to about 1 inch thick.
  7. Make an indentation down the middle of each log, about 1 inch wide and 1/2 inch deep, from end to end.
  8. In a small bowl, whisk together the egg and milk. Brush this mixture over the top and sides of the dough.
  9. Spoon the cherry filling into the indentation of each log and sprinkle with the remaining chopped almonds.
  10. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until a wooden toothpick inserted into the center comes out clean.
  11. Allow the logs to cool on the cookie sheet on a wire rack for about an hour.
  12. Transfer the cooled logs to a cutting board and, using a serrated knife, slice each log crosswise into 1/2-inch thick slices.
  13. Optional: In a small saucepan, heat the bittersweet chocolate and shortening over low heat until melted, stirring frequently. Drizzle the melted chocolate over the slices for added decadence.
