Instructions

  1. Prepare the Cherries
    Begin by washing and pitting the cherries. Using a cherry pitter, remove the stones from each cherry, being careful to preserve their shape. Once all cherries are pitted, place them in a bowl and set aside.

  2. Stuff the Cherries
    Roughly chop the dark chocolate into small pieces. Stuff each pitted cherry with a piece of the chopped chocolate, filling the hole where the pit was removed. Set these prepared cherries aside for later use.

  3. Prepare the Puff Pastry
    Roll out the puff pastry sheet onto a clean surface. Using a sharp knife, cut the pastry sheet into two equal long strips lengthwise. Brush the bottom side of each strip with melted butter, ensuring an even coating.

  4. Add Sugar and Cherries
    Sprinkle the brown sugar evenly over the buttered side of each pastry strip. Then, line the cherries with chocolate along the length of each strip, ensuring they are spaced evenly across the entire length.

  5. Roll the Pastry
    Once the cherries are arranged, carefully roll each strip of pastry from one end to the other, keeping the cherries in place. The result should be two long, filled rolls of puff pastry.

  6. Prepare the Baking Pan
    Take a round baking pan (18 cm in diameter) and line the bottom with parchment paper cut to size. This will prevent the pastry from sticking and ensure a perfect presentation when it’s done.

  7. Shape and Place in the Pan
    Gently form each puff pastry roll into a swirl shape and place them together in the center of the prepared baking pan. The rolls should fit snugly but should not be forced into the pan.
