Ingredients:
- 4 cups flat cherry cola (reduced to 1-1/2 cups)
- 2/3 cup soy sauce
- 3 tablespoons cider vinegar
- 2 garlic cloves, minced
- 1 teaspoon freshly ground black pepper
- 1 teaspoon crushed red pepper flakes
- 8 pounds pork spare ribs, trimmed

- Stir in the soy sauce, cider vinegar, minced garlic, black pepper, and red pepper flakes.
- Continue to simmer until the mixture reduces to about 2-1/2 cups. Remove from heat and let cool slightly.
- Transfer the glaze to a large bowl, cover, and refrigerate. This can be done up to 1 week ahead.

- Season the pork spare ribs generously with salt and pepper.
- Wrap each rack tightly in heavy-duty foil, sealing well. Place each foil-wrapped rack on a rimmed baking sheet.
- Bake the ribs until tender, switching the racks midway through, about 2 hours in total.
- Remove the ribs from the oven and allow them to cool slightly. Drain any accumulated drippings from the foil.
- Rewrap the ribs in foil and refrigerate if preparing ahead (up to 1 day in advance). Remove from the refrigerator about 1 hour before continuing.
