Cherry-Glazed Grilled Pork Ribs

Ingredients:

  • 4 cups flat cherry cola (reduced to 1-1/2 cups)
  • 2/3 cup soy sauce
  • 3 tablespoons cider vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon crushed red pepper flakes
  • 8 pounds pork spare ribs, trimmed
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. Prepare the Glaze:

    • In a saucepan, simmer the flat cherry cola until it reduces to about 1-1/2 cups, approximately 45 minutes.
    • Stir in the soy sauce, cider vinegar, minced garlic, black pepper, and red pepper flakes.
    • Continue to simmer until the mixture reduces to about 2-1/2 cups. Remove from heat and let cool slightly.
    • Transfer the glaze to a large bowl, cover, and refrigerate. This can be done up to 1 week ahead.
  2. Cook the Ribs in the Oven:

    • Preheat the oven to 325°F (165°C). Position oven racks in the upper and lower thirds of the oven.
    • Season the pork spare ribs generously with salt and pepper.
    • Wrap each rack tightly in heavy-duty foil, sealing well. Place each foil-wrapped rack on a rimmed baking sheet.
    • Bake the ribs until tender, switching the racks midway through, about 2 hours in total.
    • Remove the ribs from the oven and allow them to cool slightly. Drain any accumulated drippings from the foil.
    • Rewrap the ribs in foil and refrigerate if preparing ahead (up to 1 day in advance). Remove from the refrigerator about 1 hour before continuing.
  3. Grill the Ribs:

    • Preheat a medium charcoal grill to medium-high heat.
    • Cut the racks of ribs into individual ribs. Place them in the large bowl of reserved glaze and toss to coat evenly. (Alternatively, use a BBQ brush to paint the glaze onto the ribs.)
    • Grill the ribs for 5-10 minutes, turning them often to prevent burning and ensuring they are heated through.
  4. Serve:

    • Transfer the grilled ribs to a serving platter and pass extra glaze at the table.
