  1. Prepare the Shortcrust Pastry
    Begin by preparing the shortcrust pastry. In a food processor, combine the sifted all-purpose flour, a pinch of salt, and cold cubed butter. Pulse the ingredients together until the mixture resembles coarse crumbs with a sandy texture.
    Add the egg yolks and powdered sugar to the mixture, and continue to pulse until the dough begins to come together. Once the dough has absorbed the flour, turn it out onto a work surface and knead briefly to bring it into a smooth ball.
