Cherry Pavesini Trifle

Ingredients:

Heavy cream (liquid) 250ml
Granulated sugar 60g
Powdered sugar 50g
Pavesini biscuits 8
Whole milk 250ml
Granulated sugar (for custard) 75g
All-purpose flour 25g
Egg yolks 3
Vanilla bean ½ pod
Fresh cherries (for garnish) 4
Pavesini biscuits (for layering) 4

Instructions:

  1. Prepare the Custard Cream:

    • Start by making the custard cream. In a bowl, whisk together the milk, sugar, flour, and egg yolks until smooth.
    • Scrape the seeds from the vanilla bean into the mixture, then place the entire pod in the bowl as well.
    • Transfer the bowl to the stove, and heat over medium heat, whisking continuously. Keep whisking until the mixture thickens and becomes a smooth custard.
    • Once thickened, remove the vanilla pod and set the cream aside to cool. Cover the surface of the cream with plastic wrap to prevent a skin from forming, and allow it to cool completely. Once cooled, transfer the custard to a piping bag fitted with a star-shaped nozzle.
  2. Whip the Cream:

    • Place the cold heavy cream and powdered sugar into a stand mixer with the whisk attachment.
    • Beat the cream on high speed until soft peaks form. Set the whipped cream aside for assembling the trifle.
  3. Assemble the Trifle:

    • Take four glass cups or small bowls for serving the trifle.
    • Begin by cutting the Pavesini biscuits in half, and place a layer of them in the bottom of each glass.
    • Add a layer of softened cherries (drain the juice before using) over the biscuits, followed by a generous layer of the chilled custard cream.
    • Add another layer of Pavesini biscuits, more cherries, and another layer of custard.
    • Finish with a final layer of whipped cream on top.
  4. Garnish and Chill:

    • Garnish each trifle with a fresh cherry and a few additional pieces of Pavesini biscuits for decoration.
    • Refrigerate the trifles for at least 2 hours, or until ready to serve.
  5. Serve and Enjoy:
