Vanilla Muffins with Cherry Heart

Instructions:

  1. Prepare the Wet Ingredients: Begin by placing the softened butter in a large bowl. Using an electric whisk or a stand mixer, beat the butter together with the granulated sugar for about 1-2 minutes, until light and fluffy. Once well combined, add the whole egg, ensuring it is at room temperature, and continue whisking. Add the room temperature milk and whisk the mixture until it becomes smooth and homogeneous.

  2. Combine the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, salt, and a pinch of baking soda. Slowly incorporate the dry ingredients into the wet ingredients, stirring gently to avoid overmixing.

  3. Infuse the Flavor: Slice the vanilla bean pod open, scrape the seeds out, and add them to the batter. Mix well to evenly distribute the natural vanilla flavor.

  4. Prepare the Muffin Tin: Now that your muffin batter is ready, evenly distribute it into 8 silicone microwave-safe muffin molds.

  5. Add the Cherry Heart: Gently press a maraschino cherry into the center of each muffin. This will create a delicious cherry heart in the middle of each muffin once baked.

  6. Microwave Baking: Place the filled muffin molds on a microwave-safe tray. Microwave on high for about 2-3 minutes, or until the muffins have risen and are lightly golden on top. The time may vary depending on the microwave’s power, so check the muffins after 2 minutes and adjust as needed.
