Instructions

Step 1: Prepare the Chestnuts

  1. Rinse the chestnuts thoroughly under running water.
  2. Peel off the outer shells and carefully remove the thin inner skins.
  3. Place the cleaned chestnuts in a saucepan.

Step 2: Cook the Chestnuts

  1. Pour the whole milk into the saucepan, ensuring the chestnuts are completely submerged.
  2. Add the vanilla bean pod, split lengthwise to release its seeds, and a pinch of fine salt.
  3. Sprinkle in the granulated sugar and stir gently.
  4. Cook over medium heat for approximately 30-35 minutes until the chestnuts are tender.

Step 3: Mash the Chestnuts

  1. Remove the vanilla pod from the saucepan.
  2. Use a potato masher to mash the chestnuts into a smooth puree. Transfer the puree to a mixing bowl.

Step 4: Add Cocoa and Rum

  1. Sift the unsweetened cocoa powder directly into the chestnut puree.
  2. Pour in the rum and mix thoroughly with a spatula until the mixture is evenly combined.
  3. Cover the bowl with plastic wrap and refrigerate for 1-2 hours to allow the flavors to meld.

Step 5: Whip the Cream

  1. In a chilled mixing bowl, whip the fresh cream with powdered sugar until soft peaks form.
  2. Reserve a portion for garnishing the dessert.

Step 6: Assemble the Montebianco

  1. On a serving platter, dollop a generous spoonful of whipped cream to create a base.
  2. Fit a large-holed potato ricer with the chestnut mixture.
  3. Press the mixture through the ricer, letting it fall onto the whipped cream mound to form a mountain-like structure.

Step 7: Add Final Touches

  1. Garnish the “mountain” with additional whipped cream, dark chocolate shavings, or a dusting of powdered sugar for a snowy effect.
  2. Refrigerate until ready to serve, ensuring the dessert is chilled but not frozen.

Tips for Success

  • Chestnuts: Fresh chestnuts are ideal, but pre-cooked vacuum-sealed chestnuts can save time.
  • Rum Substitute: For a non-alcoholic version, replace rum with vanilla extract or chestnut syrup.
  • Decorations: Add a festive touch with sugared cranberries or edible gold flakes for special occasions.

Enjoy the luxurious flavors of Montebianco (Montblanc) and savor the harmony of chestnuts, cocoa, and cream in every bite! Perfect for cozy evenings and cherished celebrations.
