Instructions

  1. Prepare the Chicken: Begin by thoroughly cleaning the chicken pieces. Wash the chicken several times with water, and then add 1/2 teaspoon of turmeric powder to a bowl of water. Immerse the chicken in this turmeric water and allow it to sit for about 10 minutes. Drain the water and marinate the chicken with a pinch of salt. This step helps remove any lingering odor from the chicken.

  2. Sauté the Aromatics: Heat oil in a Kadai or deep pan over medium heat. Add the finely chopped shallots and sauté them until they soften and turn golden brown. Next, add the ginger garlic paste and sauté until the raw smell disappears, leaving behind a fragrant aroma. Add the curry leaves and continue sautéing for another minute to release their essence.

  3. Cook the Tomatoes: Add the chopped tomatoes to the pan and cook until they turn soft and mushy. This will help form the base of your flavorful gravy.

  6. Cook the Chicken: Add salt to taste and pour in about 1/2 cup of water. Mix everything well, cover the pan, and let the chicken cook. Simmer on low to medium heat for 15-20 minutes, or until the chicken is tender and fully cooked. Ensure the water evaporates, leaving the chicken coated in a rich, spicy masala.

  7. Final Touch: Once the chicken is cooked and the gravy has thickened, remove the pan from heat. Garnish the Chettinad Style Nattu Kozhi Varuval with freshly chopped coriander leaves to add a fresh, vibrant flavor.
