White Urad Dal 1 teaspoon
Curry Leaves 1 sprig
Red Chili Powder 1 teaspoon
Turmeric Powder 1/2 teaspoon
Salt To taste
Sesame Oil 1 tablespoon

Instructions

  1. Prepare the Vegetables:
    Begin by cutting the cauliflower into small florets and chopping the green beans finely. Once prepared, steam the cauliflower and green beans together in a steamer with a pinch of salt, cooking until they are soft and tender.

  2. Tempering the Spices:
    Heat the sesame oil in a pan or kadhai. Add the mustard seeds and urad dal. Sauté the mixture until the mustard seeds start to pop and the urad dal turns golden brown.

  3. Adding Aromatics:
    Add the curry leaves to the tempering and stir them for a few seconds to release their fragrance. Then, add the red chili powder, turmeric powder, and salt. Stir the spices into the oil to blend the flavors.

  4. Combine with Vegetables:
    Add the steamed cauliflower and green beans to the pan. Mix well so that the vegetables are evenly coated with the tempering and spices. Let the vegetables cook for another 2 minutes to absorb the flavors.

  5. Serving:
    Your Chettinad Beans and Cauliflower Poriyal is ready! Serve it hot with a side of mixed vegetable sambar and steamed rice for a traditional South Indian meal.
