Prepare the Syrup Mixture:
In a large pan, place the butter cut into small pieces, brown sugar, salt, and golden syrup. Heat gently until the butter is melted, and the sugar has fully dissolved, stirring occasionally. You should have a smooth, amber-colored liquid. Once everything has melted together, remove the pan from the heat and allow the mixture to cool slightly. Combine with Oats:
In a large mixing bowl, pour in the rolled oats. Add the cooled syrup mixture and stir thoroughly, ensuring the oats are evenly coated. The mixture should be sticky and moist. Add the dark chocolate chips and stir again, distributing them evenly throughout the oat mixture. -
Prepare the Baking Pan:
Take a 20 cm x 30 cm rectangular baking pan (with about 3 cm high sides). Grease the base and the sides using a pastry brush and butter. Cut a piece of parchment paper measuring 26 cm x 36 cm, large enough to line the entire pan. Place the parchment paper in the pan, pressing it gently against the sides and bottom without any folds. -
Bake the Flapjacks:
Pour the oat mixture into the prepared pan. Use a spatula to press it down firmly, ensuring the mixture is compact and level. Preheat your oven to 150°C for a static oven or 130°C for a fan oven. Bake for approximately 40 minutes (or 30 minutes if using a fan oven). The flapjack should turn a golden brown color on top when done. -
Cool and Slice:
Once baked, remove the pan from the oven and allow it to cool for 15-20 minutes. After it cools slightly, carefully lift the mixture out of the pan by using the parchment paper. Place it on a cutting board. Let it cool completely before slicing into 36 square pieces.

- If you prefer a thicker texture, reduce the size of your pan to create a denser flapjack.
