Instructions

Step 1: Prepare the Potato Salad

  1. Start by preparing the potatoes, as they have the longest cooking time. Place them in a pot and cover with plenty of cold water. If you want to speed up the process, you can use a pressure cooker.
  2. Once the potatoes are fully cooked, let them cool completely. For optimal slicing, you can place them in the freezer for about 15 minutes.
  3. After the potatoes have cooled, cut them into small cubes (about 2 cm in size).
  4. Place the potato cubes in a mixing bowl. Add the Greek yogurt and finely chopped chives (using kitchen scissors for easy cutting). Stir well.
  5. If the mixture becomes too thick, add 1-2 tablespoons of whole milk to loosen it up. Season with salt and black pepper to taste, then cover with plastic wrap and refrigerate while you prepare the chicken rolls.

Step 2: Prepare the Chicken Rolls

  1. Trim the ends of the green beans and rinse them under cold water to soften them slightly. Drain and set aside in a bowl. Season the beans with a pinch of salt.
  2. On a cutting board, lay out the chicken breast slices. Sprinkle a little salt over the surface.
  3. Place a small handful of the seasoned green beans in the center of each chicken breast slice.

  1. Heat the extra virgin olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the chicken rolls in the pan.

  3. Remove the rolls from the pan and set them aside to cool for a moment. Do not discard the oil in the pan, as it will be used in the next step.

Step 4: Wrapping the Rolls in Prosciutto

  1. On a clean cutting board, lay out the slices of prosciutto.
  2. Take each chicken roll and wrap it tightly with a slice of prosciutto, starting from the bottom and rolling it up completely.
  3. Return the prosciutto-wrapped rolls to the same pan. Transfer the pan to a preheated oven at 180°C (350°F) and bake for 15 minutes, or until the prosciutto is crispy and the chicken is fully cooked.
