Ingredients:

  • 300 grams Chicken
  • 1 cup Homemade Mole Sauce
  • For the Rice:
    • 1 cup Brown Rice
    • 1/2 cup Sweet Corn
    • 1 teaspoon Dried Oregano
    • Salt, to taste

Prep Time: 10 minutes
Cook Time: 65 minutes

Instructions:

  1. Begin by preparing the mole sauce according to your chosen recipe.
  2. Heat a pan with oil, then add the chicken pieces. Season the chicken with salt, pepper, and dried herbs. Cook until the chicken begins to brown.
  3. Add the mole sauce to the pan with the chicken and mix well. Bring to a boil and cook for an additional 5 minutes, then set aside.
  4. In a pressure cooker, boil the brown rice with 2 cups of water for about 5 whistles. Let the pressure release naturally.
  5. Once the rice is done, add dried oregano, salt, and sweet corn to the rice. Toss it over medium heat for a few minutes to mix the flavors.
  6. To serve, plate the rice on one side and top with chicken chunks and mole sauce. Garnish with toasted sesame seeds.
