Recipe: Rice with a Chilean Flair 🍚🇨🇱

Description: A Chilean friend taught me how to make this. I was addicted to it for a LONG time. This dish is quite tasty when eaten with my other recipe ‘Dal Curry’. Enjoy!

Ingredients:

2 cups Basmati rice
Water
1 Onion
1 English cucumber
2 Tomatoes
1/2 Onion
1 Handful of cilantro leaves
1 Lemon (juiced)
Salt

Instructions:

  1. Clean the rice: Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

  2. Boil the rice: In a large pot, add plenty of water and bring it to a boil. Once boiling, add the rinsed rice and cook until tender.

  3. Drain and rinse: Once the rice is cooked, drain it and rinse it with cold water to stop the cooking process and prevent it from sticking together.

  4. Saute onions: In the same pot, sauté the chopped yellow onion until soft and translucent.

  5. Add rice: Once the onion is softened, add the cooked rice to the pot along with a pinch of salt. Mix well to combine the flavors.

  6. Simmer: Reduce the heat to low and let the rice simmer for a while, allowing the flavors to meld together.

  7. Prepare vegetable topping: While the rice is simmering, prepare the vegetable topping. Dice the English cucumber, tomatoes, and remaining half onion. Chop the cilantro leaves finely. Mix the vegetables in a bowl and squeeze fresh lemon juice over them. Season with salt to taste and let them marinate for a few minutes.

  8. Serve: Dish out the cooked rice onto serving plates or a large platter. Top the rice with the marinated vegetables, spreading them evenly over the rice.

  9. Enjoy: This dish is incredibly flavorful on its own but pairs exceptionally well with Dal Curry, another recipe I’ve posted on this board. Serve hot and enjoy the burst of Chilean flavors!
