Ingredients:
- 1 onion
- 1 can kidney beans
- 2 tablespoons chili powder
- 3 chicken thighs
- 8 whole tomatoes
- 1 cup cheddar cheese (shredded)
- 1/4 cup olive oil
Instructions:
- Preheat oven to 350°F (175°C).
- Coat a 9×13-inch baking pan with nonstick spray.
- In a small skillet, heat olive oil over medium heat.
- Add onion and cook for 3 to 5 minutes, or until softened, stirring occasionally.
- Transfer cooked onions to a medium bowl and add kidney beans and chili powder; mix well.
- Transfer the bean mixture to the prepared baking pan.
- Arrange chicken pieces on top of the bean mixture, pressing them into the beans.
- Spoon the whole tomatoes over the chicken and beans, and add the reserved tomato juice.
- Bake for about 65 minutes, or until the chicken is cooked through.
