Chilled Summer Minestrone Soup with Fresh Veggies

Cold Minestrone Soup

Extra virgin olive oil To taste

Instructions:

  1. Prepare the tomatoes: Begin by scoring the bottom of the tomatoes with an “X”. Blanch them for a few minutes, drain them, remove the skin, and discard the seeds. Dice the tomatoes into small cubes.

  2. Prepare the green beans: Wash the green beans thoroughly, trim the ends, and chop them into small pieces.

  3. Prepare the carrots: Peel the carrots using a vegetable peeler, then chop them into small cubes.

  4. Prepare the leek: Slice the leek into thin rings.

  5. Prepare the potatoes: Peel the potatoes and cut them into small cubes.

  6. Prepare the zucchini: Wash the zucchini, trim the ends, and chop them into small cubes.

  7. Prepare the lettuce: Wash the lettuce leaves and separate them into individual leaves.

  8. Prepare the spinach: Rinse the spinach leaves thoroughly, and if any leaves are too large, cut them into smaller pieces.

  9. Chop the spring onion: Finely chop the fresh spring onion.

  10. Make the vegetable broth: In a large pot, add 1 liter of water, a halved onion, and a chopped carrot. Bring the water to a boil, season with salt, and let it simmer for at least 10 minutes to infuse the flavors.

  11. Cook the vegetables: In a separate large pan, heat a little olive oil. Sauté the chopped spring onion, carrots, zucchini, and green beans until they start to soften.

  12. Add the broth and remaining vegetables: Pour the prepared vegetable broth into the pan with the sautéed vegetables. Add the lettuce, diced tomatoes, and cook for another 15 minutes until the vegetables are tender.

  13. Season and finish: Season the minestrone with salt to taste. Add the fresh parsley and stir to combine.

  14. Chill and serve: Let the minestrone cool to room temperature. Once cooled, serve it as a refreshing cold dish.
