Instructions
To create this refreshing cold vegetable soup, start by preparing the vegetables. Peel and trim the carrots, then cut them into thin strips. Wash and trim the green beans, slicing them into small rounds. Clean the spring onion, removing the root, and slice it into rings along its length, using mostly the white part. Wash the tomato, remove the stem, and slice it into wedges, cutting each wedge in half to create quarters. Peel and wash the potato, then cut it into small sticks. Finally, wash the zucchini flowers gently, remove the internal pistil, and chop them roughly.
In a large saucepan, combine all the prepared vegetables and cover them with 1 liter of water. Add the bay leaf and season with salt and pepper. Cook over low heat for about 25 minutes, allowing the vegetables to soften and infuse their flavors.
After 25 minutes, add the egg farfalle pasta directly to the pot, stirring well to combine. Add fresh oregano to the soup for a fragrant touch and let the pasta cook in the soup for another few minutes, ensuring everything is well-mixed.
