Garlic (finely chopped or grated) 4 cloves
Blanched tomatoes (pureed) 2
Red Chilli Sauce 3 teaspoons
Water 2 cups
Corn Flour 2 teaspoons (mixed with 2 tbsp water)
Sugar 1 teaspoon
Mixed vegetables (chopped) 1/4 cup
Salt To taste
For the Rice Quantity
Basmati rice 1 cup (soaked for 30 minutes)
Onion (finely chopped) 1
Carrot (Gajjar, finely chopped) 1
Green beans (French Beans, finely chopped) 5-6
Red, Yellow, and Green Bell Peppers (Capsicum, finely chopped) 1/4 cup
Green Chillies (finely chopped) 2 (adjust to taste)
Ginger Garlic Paste 1 teaspoon
Sesame (Gingelly) Oil 2 teaspoons
Salt To taste
For the Roasted Vegetables Quantity
Paneer (Homemade Cottage Cheese, cubed) 200 grams
Onion (diced) 1
Carrot (Gajjar, diced & blanched) 1
Tomato (de-seeded & diced) 1
Cauliflower (Gobi, cut into florets & blanched) 1/2 head
Sweet Corn (blanched) 1/4 cup
Green beans (French Beans, cut into 3-inch pieces) 7
Oil 2 teaspoons
Whole Black Peppercorns (pounded) 1/2 teaspoon
Salt To taste
For Garnish Quantity
Spring Onion Greens (finely chopped) 1/4 cup
Cabbage (Patta Gobi/Muttaikose, soaked in cold water) Few leaves
Butter (Salted) 1 teaspoon

Preparation Time: 15 minutes

Cooking Time: 45 minutes

Instructions:

  1. Prepare the Rice:

    • Begin by cooking the basmati rice. Soak it in water for about 30 minutes, then cook it in a pot with water and a pinch of salt. Set aside.
  2. Make the Chilli Garlic Sauce:

    • In a pan, heat 1 teaspoon of sesame oil. Add the finely chopped garlic and sauté until fragrant.
    • Add the pureed blanched tomatoes to the pan and cook until the mixture thickens slightly.
    • Stir in the red chilli sauce, water, and corn flour (mixed with a little water to make a slurry). Add sugar and salt to taste.
    • Simmer the sauce for a few minutes, stirring occasionally. Once thickened, add the chopped mixed vegetables and let them cook for another 2-3 minutes.
    • Adjust the seasoning with salt, and set the sauce aside.
  3. Roast the Vegetables:

    • Heat 2 teaspoons of oil in a wide pan and begin by pan-frying the paneer cubes until golden brown on all sides. Once done, remove them from the pan and set aside.
    • In the same pan, add the diced onion, carrots, cauliflower, green beans, and a pinch of salt and pepper. Sauté on high heat for 3-4 minutes, ensuring the vegetables stay slightly crisp.
    • Add the tomatoes and sweet corn to the pan and cook for another 3-4 minutes until the vegetables are tender but still have a bite to them.
    • Once the vegetables are cooked, remove from the heat and set aside.
  4. Assemble the Sizzler:

    • On a hot sizzler plate (or any large pan), spread a layer of cooked rice.
    • Arrange the roasted vegetables and fried paneer cubes over the rice.
    • Pour the prepared chilli garlic sauce generously over the vegetables and paneer.
