Spiced Biscottini with Chocolate and Almonds

Instructions:

  1. Prepare the Ingredients:
    Begin by finely chopping the almonds and dark chocolate. Place them together in a large mixing bowl and set aside.

  2. Whip the Egg Whites:
    In a separate bowl, beat the egg white with a pinch of salt until stiff peaks form. Gradually add the sugar, one tablespoon at a time, while continuing to beat with an electric mixer. Ensure the mixture remains firm and glossy.

  3. Combine the Mixtures:
    Gently fold the whipped egg whites into the almond and chocolate mixture. Be careful not to deflate the egg whites. Add the ground cinnamon and cloves, and mix everything together until well combined.

  4. Shape the Biscottini:
    With the prepared dough, form small balls about the size of a walnut. Arrange them on a baking sheet lined with parchment paper, ensuring they are spaced evenly.

  5. Bake the Biscottini:
    Preheat your oven to 160°C (320°F). Bake the biscottini for 15-20 minutes, or until they are golden brown and firm to the touch.
