Category: Desserts
Servings: 12 muffins

Ingredients

Ingredient Quantity
Amaranth 25g
Amaranth Flour 100g
Whole Wheat Flour 100g
All-purpose Flour 100g
Brown Sugar 150g
Rice Milk 180g
Extra Virgin Olive Oil 80g
Chocolate Chips 60g
Egg 1
Egg Yolks 1
Baking Powder 9g
Orange Zest 1 (zested)
Pinch of Salt 1 pinch
Additional Chocolate Chips 20g

Instructions

  1. Toast the Amaranth: Begin by toasting the amaranth in a non-stick skillet. The seeds will start popping like popcorn, so cover the skillet with a lid to contain the popping. This process enhances the flavor and texture of the amaranth.

  2. Mix the Dry Ingredients: In a large mixing bowl, sift together the amaranth flour, all-purpose flour, whole wheat flour, and baking powder. Stir in the brown sugar and a pinch of salt.

  3. Prepare the Wet Ingredients: In a separate bowl, beat the egg and egg yolk using a whisk. Once well-combined, add the rice milk and mix thoroughly.

  4. Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to gently fold the mixture until it is smooth and well-combined.

  5. Add Chocolate Chips and Orange Zest: Stir in the chocolate chips and the freshly grated orange zest, which will add a citrusy aroma and flavor that perfectly complements the rich chocolate.

  6. Fill the Muffin Tin: Transfer the batter into a piping bag and carefully fill the muffin cups, ensuring that they are filled no more than ¾ full to allow room for rising.

  7. Top with Toppings: Sprinkle the tops of the muffins with extra chocolate chips and the toasted amaranth to give them a nice crunch and extra flavor.

  8. Bake the Muffins: Place the muffin tin in a preheated oven and bake at 180°C (350°F) for approximately 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  9. Cool and Serve: Allow the muffins to cool slightly before removing them from the tin. Once they have cooled to a warm temperature, serve and enjoy your delicious amaranth muffins!

These Amaranth Muffins are perfect for breakfast or as a sweet afternoon treat, combining the nutty flavor of amaranth with the indulgence of chocolate and the zest of orange. They are gluten-free, nutrient-packed, and ideal for those looking to enjoy a wholesome yet delicious snack.
