All-purpose flour (00) | 260g |
Water | 60ml |
Vegetable oil | 2 tbsp |
Eggs | 2 (1 for dough, 1 for glazing) |
Baking powder | 3g |
Salt | 1 pinch |
Milk chocolate | 60g |
Apple | 1 medium-sized |
Hazelnuts (shelled) | 40g |
Cinnamon sticks | 2 sticks |
Lemon juice | 1 tbsp |
Water (for dough) | as needed |
Brown sugar | 20g |
Instructions
Prepare the Dough:
- In a large bowl, sift the flour and baking powder together.
- Add a pinch of salt, water, eggs, and vegetable oil. Use your fingers to mix the ingredients together.
- Transfer the mixture to a flat surface and knead until you form a smooth, uniform dough.
- Wrap the dough in plastic wrap and let it rest in a cool place for 30 minutes.
Prepare the Filling:
- While the dough is resting, coarsely chop the hazelnuts.
- Wash the apple, remove the core, and cut it into wedges. Peel the wedges and dice them into small cubes.
- In a pan, cook the apple cubes with the cinnamon sticks over medium heat for a few minutes until softened. Transfer the apples to a bowl, removing the cinnamon sticks.
- Add the chopped hazelnuts to the apple mixture, stir well, and set aside to cool.
- Chop the milk chocolate into small sticks and set aside.
Assemble the Saccottini:
- Preheat your oven to 180°C (350°F), static mode.
- After the dough has rested, divide it into two equal portions. Roll each portion into a rectangle, approximately 35 x 20 cm in size.
- Lightly brush the surface of each rectangle with a bit of water.
- Fold one long edge of the rectangle towards the center, and then fold the other side to meet it, creating a slightly narrower rectangle.
- Add the apple and hazelnut mixture along the top edge of the dough, leaving space from the edges. Place the chocolate sticks over the apple mixture, followed by another layer of chocolate sticks.
- Brush the bottom edge of the dough with water, then fold the dough over the filling, sealing it tightly. Repeat the process with the second portion of dough.
- Place each prepared saccottino onto a baking sheet lined with parchment paper.
Baking:
- Brush the tops of the saccottini with the beaten egg to give them a golden finish.
- Bake in the preheated oven for about 25 minutes, or until golden brown and puffed up.
- Once baked, remove from the oven and allow to cool slightly before serving.
Serving Suggestions:
These saccottini are best served warm, so enjoy them while they’re still slightly hot from the oven. Perfect for an afternoon tea, a family dessert, or as a sweet indulgence for any occasion.
