Instructions

  1. Grind the Cashews
    Begin by grinding the cashew nuts into a fine powder using a blender or food processor. Set the cashew powder aside.

  2. Prepare the Sugar Syrup
    In a heavy-bottomed pan, add the sugar and water. Set the pan on medium heat and allow the mixture to come to a boil. Once the sugar has dissolved completely, reduce the heat slightly and let the syrup boil for a few minutes until it reaches a one-string consistency. This is a critical step for ensuring that the texture of the katli is just right.

    • How to check for one-string consistency: Drop a few drops of the syrup onto a clean plate and let it cool for 15-20 seconds. Then, pinch the syrup between your thumb and index finger. If it forms a single thread when you pull your fingers apart, the syrup has reached the right consistency.
  3. Combine Cashew Powder with Syrup
    Once the sugar syrup is at the right consistency, add the ground cashew powder into the syrup. Stir the mixture continuously for 4-5 minutes. As you stir, the mixture will begin to thicken and turn into a paste-like consistency.

  4. Knead the Mixture
    Remove the pan from the heat once the mixture has thickened. Allow it to cool for a few minutes, just until it’s cool enough to handle. Grease your palms with a little bit of ghee (clarified butter), and knead the mixture until it becomes smooth, uniform, and dough-like.

  5. Roll the Dough
    Next, place a sheet of butter paper on your kitchen counter. Transfer the dough onto the butter paper and use a rolling pin to roll it out evenly to a thickness of about 5-6 mm. Try to maintain an even thickness across the surface.

  6. Melt the Chocolate
    Now, take a saucepan and fill it with water. Heat the water on medium, and place a heatproof bowl on top of the saucepan. Add the milk or dark chocolate into the bowl. The steam from the simmering water below will gradually melt the chocolate, so make sure the boiling water does not touch the bowl.

  7. Assemble the Katli
    Once the chocolate has melted completely, pour it over the rolled-out cashew dough. Use a spatula to spread the chocolate evenly over the surface of the dough, ensuring that every part is covered.

  8. Chill and Set
    Allow the chocolate to cool slightly at room temperature before transferring the sheet to the refrigerator. Let it chill for 15-20 minutes, allowing the chocolate to set completely.

  9. Cut into Diamond Shapes
    After the chocolate has solidified, remove the katli from the refrigerator. Use a sharp knife to cut it into diamond-shaped pieces, the traditional shape for Kaju Katli. To achieve even pieces, make intersecting diagonal lines on the surface.
