Prepare the dough:
Begin by sifting the flour and cocoa powder together in a large bowl. Cut the butter into small cubes and place it in a separate bowl. Add the powdered sugar to the butter and, using your fingers, work the mixture until it resembles coarse crumbs. Gradually incorporate the sifted flour and cocoa mixture into the butter-sugar mix, using a spoon to combine. -
Add egg yolk:
Separate the egg yolk and white. Set the egg whites aside for the glaze. Add the egg yolk into the flour-butter mixture and mix briefly until the dough starts to come together. -
Chill the dough:
Transfer the dough onto a clean surface, gather it into a ball, and wrap it in plastic wrap. Chill the dough in the refrigerator for at least 30 minutes. -
Roll the dough:
