Instructions

  1. Prepare the Gelato Base
    Start by lining a rectangular cake pan (17.5 x 25 cm) with parchment paper. Place the pan in the freezer to chill. Next, add the gelato into the pan. If you’re using store-bought gelato, either from a tub or artisanal, make sure it’s softened slightly for easy spreading. Once spread, level it out evenly.

  2. Freeze and Set
    Place the pan in the freezer and allow the gelato to solidify for at least 2 hours, or until it is firm.

  3. Cut the Gelato into Cubes
    Once the gelato has set, carefully remove the gelato slab from the pan. Using a knife, gently slide along the inner edge of the pan to release the gelato. With the knife, cut the gelato into small cubes, around 1 cm in size, creating a grid-like pattern. Return the cubes to the freezer for an additional 3 hours.

  4. Prepare the Toppings and Chocolate Coating
    While the gelato is freezing, break the corn flakes into small pieces by hand and set them aside. Next, melt the dark chocolate. You can do this by either placing the chocolate in a heatproof bowl over a simmering pot of water (double boiler method), making sure no water touches the chocolate, or melting it in the microwave in short intervals, stirring occasionally.

  5. Coat the Gelato Bites
    Once the chocolate has melted and cooled slightly, dip each frozen gelato cube one at a time into the chocolate, making sure each piece is fully coated. Gently tap the fork on the edge of the bowl to remove any excess chocolate.

  6. Add the Crunch
    While the chocolate coating is still soft, sprinkle each bite with a topping of your choice – you can choose from pistachio crumble, hazelnut crumble, or shredded coconut for an extra crunch and flavor contrast.
