- Add the pecans, walnuts, and vanilla extract.
- Beat the mixture until it thickens.

- Turn the mixture out onto a board and divide it in half.

- Wrap each roll in waxed paper and refrigerate for at least 1 hour before proceeding.

- In the top of a double boiler, melt the chocolate pieces over hot, but not boiling, water.
- Remove the melted chocolate from heat.
- Take the date rolls out from the refrigerator and spread half of the melted chocolate over each roll, ensuring an even coating.
