Category: Leavened Breads
Yields: 20 pieces
Ingredients:
Ingredient | Quantity |
---|---|
All-purpose flour | 350g |
Whole milk | 150g + 40g |
Peanut oil | 30g |
Fresh yeast | 8g |
Fine salt | A pinch |
Dark chocolate chips | 60g |
Granulated sugar | 45g |
Extra sugar (for sprinkling) | As needed |
Instructions:
-
Prepare the Yeast Mixture
Start by breaking the fresh yeast into small pieces and dissolving it in 30g of the total amount of whole milk. This will activate the yeast and help ensure a good rise for your grissini. -
Make the Dough
In a large mixing bowl, place the all-purpose flour. Create a small well in the center and pour the yeast mixture into it. Mix gently using a spoon to combine. Gradually add the remaining 120g of milk to the mixture while stirring to incorporate all the ingredients. -
Add Fat and Flavor
Pour in the peanut oil and continue mixing until the dough starts to come together. Add the granulated sugar and a pinch of fine salt. Stir until the dough becomes a soft and smooth mass. -
Knead the Dough
Transfer the dough to a floured surface and knead it for a few minutes until smooth and elastic. Once ready, flatten the dough slightly and sprinkle the dark chocolate chips evenly over the surface. -
Rest and Rise
Fold the dough over the chocolate chips and knead briefly to distribute them through the dough. Shape the dough into a ball, cover with a clean kitchen towel, and let it rest for about 2 hours, allowing it to rise and double in size. -
Shape the Grissini
Once the dough has risen, gently turn it out onto a floured work surface. Roll it into a rough rectangle, then use your hands to stretch each piece into long, thin strips about 30 cm in length. Arrange the strips on a baking sheet lined with parchment paper, spacing them slightly apart. -
Second Rise and Final Touch
Brush the top of each grissino with the remaining 20g of whole milk, then sprinkle a light dusting of sugar over them for a sweet finish. Allow the grissini to rise for another hour, giving them time to puff up slightly. -
Bake
Preheat the oven to 180ยฐC (350ยฐF) in the fan-assisted setting. Place the grissini in the oven and bake for approximately 20 minutes, or until they are golden and crispy. -
Serve
Once baked, remove from the oven and let cool slightly. Serve these delightful chocolate grissini as a sweet snack or as a fun addition to your dessert spread.
Enjoy your homemade chocolate grissini, a perfect treat that combines the crunch of breadsticks with the indulgence of chocolate!
