Instructions

  1. Prepare the Dough
Start by softening the butter. Cut it into small cubes and place it in a large mixing bowl. Add the sugar, salt, and vanilla seeds scraped from the pod. Use an electric mixer to blend the ingredients until the mixture becomes light and fluffy.

  2. Incorporate the Eggs
Gradually add half of the eggs, mixing thoroughly until they are well incorporated. Once the first portion of eggs is absorbed and the dough has a smooth, airy texture, add the remaining eggs. Continue mixing with the electric mixer until the dough is uniform and well-mixed.

  3. Add the Flour
Gradually incorporate the flour into the dough. Mix until all of the flour is absorbed and the dough reaches a soft, slightly sticky consistency. At this point, you can add the lemon zest to infuse a fresh citrus aroma into your dough.

  4. Prepare for Baking
Transfer the dough into a pastry bag fitted with a 12 mm star-shaped tip. Seal the open end of the pastry bag to prevent the dough from spilling out. Pipe the dough onto a baking sheet lined with parchment paper, forming the characteristic “S” shapes of the Biscotti Esse, making sure to space them evenly.

  5. Chill and Bake
Let the formed dough rest in the refrigerator for 5 minutes to firm up slightly. Preheat the oven to 175ยฐC (350ยฐF) and bake the biscotti for about 15 minutes, or until they are golden and firm to the touch. Once baked, allow the cookies to cool completely on the baking sheet.

  6. Prepare the Chocolate Coating
While the biscotti cools, chop the dark chocolate into small pieces. Melt the chocolate using your preferred methodโ€”either in a double boiler (bagnomaria) or in the microwave. If using the microwave, heat the chocolate in short bursts, stirring frequently to ensure it melts evenly.

  7. Temper the Chocolate
Once the chocolate reaches a temperature of 45ยฐC (113ยฐF), add the remaining chocolate pieces. Stir vigorously until the chocolate is smooth and glossy, ensuring it is properly tempered for a shiny finish.

  8. Dip and Set
Dip the cooled biscotti into the melted chocolate, covering them halfway. Gently tap the biscotti to remove any excess chocolate and place them on a wire rack lined with parchment paper to set. Allow the chocolate to harden at room temperature.

  9. Enjoy
Once the chocolate has set, your Biscotti Esse are ready to be enjoyed! These delicious, buttery cookies with a touch of dark chocolate will make the perfect accompaniment to a cup of coffee or tea.

These Biscotti Esse are sure to impress with their delicate texture, refreshing citrus note, and the rich indulgence of dark chocolate. This classic Italian treat is not only easy to prepare but also versatile, making them an excellent choice for special occasions, or as a delightful everyday treat.
