Panettone Skewers with Two-Chocolate Fondue

Instructions

To prepare the Panettone skewers with two-chocolate fondue, begin by preparing the dark chocolate fondue. In a small saucepan, heat 150g of the fresh liquid cream over medium heat. Allow the cream to warm until it begins to steam, but avoid bringing it to a boil. Once heated, break the dark chocolate into small pieces and add it to the saucepan. Stir continuously to ensure the chocolate melts smoothly, forming a velvety mixture. If you prefer a gentler melting process, you can melt the chocolate over a double boiler, ensuring the water doesn’t touch the bottom of the bowl. This method helps maintain the sweetness of the chocolate.

Next, add 125g of fresh cream at room temperature to the melted dark chocolate and stir to combine, ensuring a smooth texture. Set this aside to keep warm.

Now, it’s time to prepare the Panettone. Slice the Panettone into even-sized pieces, then cut those into small cubes. Arrange the cubes on a baking tray lined with parchment paper, ensuring that they don’t overlap for even cooking. Bake them in a preheated fan oven at 190°C for about 8 minutes. If you’re using a static oven, preheat to 210°C and bake the cubes for around 16 minutes. The cubes should turn golden and slightly crisp on the outside while staying soft inside.

After baking, allow the Panettone cubes to cool slightly before assembling the skewers. Take wooden skewers and thread 3 cubes of Panettone onto each skewer, spacing them slightly apart to allow for even coverage of the fondue.

Finally, prepare the white chocolate fondue by following the same method you used for the dark chocolate. Heat the remaining fresh cream in a saucepan, add the white chocolate, and stir until the chocolate melts completely into a smooth mixture.

To serve, place the Panettone skewers on a serving plate. You can either serve the two types of fondue in separate bowls for dipping, or drizzle the fondue directly over the skewers, creating a beautiful, indulgent dessert.
