Instructions

1. Prepare the Chocolate Shortcrust Pastry:

  1. In a mixing bowl, sift together the flour, baking powder, and cocoa powder.
  2. Add cold butter, cut into small cubes, to the dry ingredients. Using your fingertips, work the mixture until it becomes crumbly.
  3. Incorporate the sugar and eggs into the dough, blending until the ingredients come together to form a cohesive ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.

2. Shape the Pastry Discs:

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the chilled dough on a lightly floured surface to a thickness of about 5mm.
  3. Use a 22 cm (8.5-inch) ring mold or pastry cutter to cut out a round disc from the dough. Set this aside.
  4. Gather the remaining dough, roll it out again, and cut another disc of the same size.
  5. Place both discs on a baking sheet lined with parchment paper.

3. Bake the Pastry Discs:

  1. Bake the discs in the preheated oven for 12-15 minutes or until firm to the touch.
  2. Remove the discs from the oven and allow them to cool completely before handling.

4. Assemble the Ice Cream Cake:

  1. Once the pastry discs are cool, transfer the fior di latte gelato into a large bowl. Add the dark chocolate chips and mix gently to combine.
  2. Place one of the pastry discs on a serving plate. Use the 22 cm ring mold as a frame around the disc.
  3. Spoon the gelato mixture into the ring mold, spreading it evenly to create a smooth layer.
  4. Place the second pastry disc on top, pressing down gently to secure it.

5. Finish and Serve:

  1. Carefully remove the ring mold by sliding it upward to reveal the assembled cake.
  2. Dust the top of the cake with a light sprinkling of cocoa powder for decoration.
  3. Slice and serve immediately, or store in the freezer until ready to enjoy.
