Instructions

  1. Prepare the Chocolate:
    Begin by breaking the milk chocolate into smaller pieces using a sharp knife. This will make it easier to melt. Then, place the chocolate in a heatproof bowl.

  2. Melt the Chocolate:
    Set up a double boiler by placing the bowl with chocolate over a pot of simmering water, ensuring the bowl doesn’t touch the water. Stir occasionally until the chocolate has completely melted and is smooth and glossy.

  3. Prepare the Baking Dish:
    Line a 30×23 cm (12×9 inches) rectangular baking dish with parchment paper. This will prevent the bars from sticking once they’ve set.

  4. Spread the Melted Chocolate:
    Pour the melted chocolate evenly into the prepared baking dish. Use a spatula or the back of a spoon to gently spread the chocolate across the surface of the dish, making sure it covers the entire bottom.

  5. Melt the Second Batch of Chocolate:
    In the same manner, melt 300g of the remaining milk chocolate over a double boiler. Once fully melted, add the butter and stir until combined. The butter will add a smooth, glossy texture to the mixture (optional, if you’d prefer a lighter version, you can skip the butter).

  6. Add the Puffed Rice:
    Once the chocolate mixture is smooth and glossy, remove it from the heat and place it on a very low burner. Gradually add the puffed rice, stirring continuously to ensure the rice is evenly coated with the melted chocolate. Stir until all the rice is fully coated and the mixture is uniform.

  7. Assemble the Bars:
    Carefully spread the puffed rice and chocolate mixture evenly over the layer of melted chocolate in the baking dish. Use a spatula or spoon to smooth the surface and ensure even coverage.

  8. Cool Slightly:
    Let the mixture cool slightly at room temperature for a few minutes, allowing the chocolate to begin setting but still remain soft.

  9. Prepare the Chocolate Topping:
    For the topping, melt the remaining 150g of milk chocolate in a double boiler. Once melted, pour it over the cooled puffed rice layer. Use a spatula or the back of a spoon to spread the chocolate evenly over the surface, completely covering the puffed rice layer.

  10. Allow to Set:
    Let the bars set at room temperature for 4-5 hours. Do not refrigerate them, as it may cause the texture to become too firm. The bars will become firm and compact while still retaining a delightful softness.

  11. Cut and Serve:
    Once set, remove the baking dish from the parchment paper and place the slab on a cutting board. Use a sharp knife to cut the bars into pieces measuring approximately 3×8 cm (1.2×3 inches), yielding around 14-15 bars.
