Ingredients:

  • 2 pints chocolate ice cream
  • 1 cup walnuts, chopped
  • 1/2 cup unsalted butter, melted
  • 6 ounces chocolate wafer cookies
  • 2/3 cup miniature marshmallows
  • 8 ounces milk chocolate, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 325°F (163°C) and butter a 9-inch pie pan.

  2. Finely grind the chocolate wafer cookies in a food processor until they resemble crumbs.

  3. Add the melted butter to the cookie crumbs and process until well combined.

  4. Press the crumb mixture firmly onto the bottom and up the sides of the prepared pan to form the crust.

  5. Bake the crust for about 10 minutes, or until set.

  6. Allow the crust to cool completely.

  7. In a medium saucepan, bring the heavy cream to a gentle simmer over medium heat.

  8. Remove the saucepan from the heat and add the chopped milk chocolate.

  9. Let the mixture stand for about a minute, then whisk until the chocolate is melted and the mixture is smooth.

  10. Stir in the vanilla extract and let the sauce cool at room temperature until slightly thickened, about 20 minutes.

  11. In a large metal bowl, combine the miniature marshmallows and the remaining heavy cream.

  12. Set the bowl over a saucepan of barely simmering water and stir until the marshmallows are melted and the mixture is smooth, about 3 minutes.

  13. Remove the bowl from the heat and stir in the vanilla extract.

  14. Let the marshmallow sauce cool until slightly thickened but still pourable, about 10 minutes.

  15. Spread one quart of chocolate ice cream evenly over the cooled crust.

  16. Drop half of the milk chocolate sauce by tablespoonfuls over the ice cream, spacing them apart.

  17. Sprinkle half of the chopped walnuts over the sauce.

  18. Drizzle half of the marshmallow sauce over the walnuts.

  19. Freeze the pie until the sauces are set, about 10 minutes.

  20. Spread another quart of chocolate ice cream evenly over the first layer.

  21. Drop the remaining milk chocolate sauce over the ice cream and drizzle the remaining marshmallow sauce over it, allowing some of the chocolate sauce to show through.

  22. Sprinkle the remaining chopped walnuts over the top.

  23. Freeze the pie until firm, about 4 hours, or up to 5 days ahead.

  24. To serve, carefully cut around the sides of the pan to loosen the pie, then let it soften slightly at room temperature for about 10 minutes before removing the pan sides.

  25. Enjoy your indulgent Rocky Road Sundae Pie with friends and family!

This pie is the perfect combination of creamy, crunchy, and gooey textures, making it a delightful treat for any occasion. Plus, you can easily prepare it ahead of time and keep it in the freezer until you’re ready to serve, making it ideal for entertaining or simply satisfying your sweet tooth on a whim.
