Instructions

  1. Roast the Semolina
    Start by heating 3 tablespoons of ghee in a kadai (deep pan) over medium heat. Once the ghee melts, add the semolina (sooji) and roast it while stirring frequently. Keep roasting until the semolina starts emitting a pleasant, nutty aroma and turns a light golden brown color.

  2. Add Cocoa Powder
    Stir in 1 tablespoon of cocoa powder. Mix it well to ensure the cocoa powder is evenly distributed with the semolina.

  3. Add Hot Water
    Gradually add the 1-1/3 cups of hot water to the mixture while stirring continuously. This will help the semolina absorb the water without forming lumps. Keep stirring until the mixture thickens.

  4. Sweeten and Flavor
    Add 1/2 cup of sugar and 1/2 teaspoon of cardamom powder (elaichi). Stir well to ensure the sugar dissolves completely and the halwa gets a nice, smooth consistency.

  5. Simmer
    Once the sugar is fully incorporated, cover the kadai and let the halwa simmer for another 2 minutes. This allows the flavors to meld together.

  6. Garnish and Serve
