Instructions
-
Roast the Semolina
Start by heating 3 tablespoons of ghee in a kadai (deep pan) over medium heat. Once the ghee melts, add the semolina (sooji) and roast it while stirring frequently. Keep roasting until the semolina starts emitting a pleasant, nutty aroma and turns a light golden brown color. -
Add Cocoa Powder
Stir in 1 tablespoon of cocoa powder. Mix it well to ensure the cocoa powder is evenly distributed with the semolina. -
Add Hot Water
Gradually add the 1-1/3 cups of hot water to the mixture while stirring continuously. This will help the semolina absorb the water without forming lumps. Keep stirring until the mixture thickens. -
Sweeten and Flavor
Add 1/2 cup of sugar and 1/2 teaspoon of cardamom powder (elaichi). Stir well to ensure the sugar dissolves completely and the halwa gets a nice, smooth consistency. -
Simmer
Once the sugar is fully incorporated, cover the kadai and let the halwa simmer for another 2 minutes. This allows the flavors to meld together. -
Garnish and Serve
Transfer the halwa to a serving bowl and garnish with sliced mixed nuts like almonds and cashews for a crunchy texture. The Chocolate and Semolina Halwa is now ready to serve!
