Description:
Susan’s Favourite One Bowl Cake, affectionately known as Wacky Cake, holds a special place in the heart of its originator, Brenna Ekstand from Rosetown, Sask. This delightful recipe, discovered in her grandmother’s handwritten collection, won accolades in a contest sponsored by Fry’s Cocoa. It’s a nostalgic treat that captures the essence of homemade goodness with its simple yet wholesome ingredients.

Ingredients:

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1/2 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 2 cups cold water

Instructions:

  1. Preheat your oven to 350°F (175°C). Prepare a 9-inch square baking pan by lightly greasing it.

  2. Mix together the flour, sugar, cocoa powder, baking soda, and salt in a large mixing bowl using a fork until well combined.

  3. Create three wells or indentations in the dry mixture using the back of the fork or a wooden spoon.

  4. Pour the vegetable oil into one well, the vinegar into another, and the vanilla extract into the third well.

  5. Pour the cold water over the entire mixture.

  6. Stir the ingredients together with a spoon or fork until the batter is smooth and well combined. Make sure there are no lumps remaining.

  7. Transfer the batter into the prepared baking pan, spreading it evenly.

  8. Bake in the preheated oven on the center rack for approximately 45 minutes. The cake is done when it springs back lightly to the touch in the center.

  9. Remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Recipe Notes:

  • This cake is known for its moist texture and rich chocolate flavor, despite being made without eggs or dairy.
  • Ensure all ingredients are well incorporated to achieve a uniform texture.
  • Serve slices of this cake plain or with a dusting of powdered sugar, a dollop of whipped cream, or a scoop of vanilla ice cream for a delightful treat.
  • Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.

This cherished recipe from Susan’s family not only offers a delicious dessert option but also a glimpse into the history and tradition of homemade baking. Enjoy creating and savoring this Wacky Cake with friends and family, sharing the joy of its simple yet delightful flavors! 🍰
