Description:
Susan’s Favourite One Bowl Cake, affectionately known as Wacky Cake, holds a special place in the heart of its originator, Brenna Ekstand from Rosetown, Sask. This delightful recipe, discovered in her grandmother’s handwritten collection, won accolades in a contest sponsored by Fry’s Cocoa. It’s a nostalgic treat that captures the essence of homemade goodness with its simple yet wholesome ingredients.
Ingredients:
- 3 cups all-purpose flour
- 2 cups sugar
- 1/2 cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil
- 2 cups cold water
Instructions:
-
Preheat your oven to 350°F (175°C). Prepare a 9-inch square baking pan by lightly greasing it.
-
Mix together the flour, sugar, cocoa powder, baking soda, and salt in a large mixing bowl using a fork until well combined.
-
Create three wells or indentations in the dry mixture using the back of the fork or a wooden spoon.
-
Pour the vegetable oil into one well, the vinegar into another, and the vanilla extract into the third well.
-
Pour the cold water over the entire mixture.
-
Stir the ingredients together with a spoon or fork until the batter is smooth and well combined. Make sure there are no lumps remaining.
-
Transfer the batter into the prepared baking pan, spreading it evenly.
-
Bake in the preheated oven on the center rack for approximately 45 minutes. The cake is done when it springs back lightly to the touch in the center.
-
Remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
