Instructions

  1. Pressure Cook the Vegetables:
    Begin by pressure cooking the chopped chow chow (chayote) and green beans in a pressure cooker. Add just enough water to cover the vegetables, along with a pinch of salt. Cook for about 2 whistles on medium heat. Once done, allow the pressure to release naturally. Afterward, drain the excess water and set the cooked vegetables aside.

  2. Temper the Spices:
    In a large saucepan, heat 1-2 tablespoons of oil over medium heat. Add the mustard seeds and cumin seeds. Allow them to crackle and pop, releasing their wonderful fragrance.

  3. Add the Dals and Curry Leaves:
    Once the spices have crackled, add the urad dal (split black gram) and chana dal (Bengal gram). Stir-fry the dals for about a minute or until they become lightly golden. Then, add a sprig of fresh curry leaves to the pan. Sauté for a few seconds until the curry leaves release their aroma.

  4. Sauté Onions and Green Chillies:
    Add the chopped onions to the pan and sauté until they turn soft and translucent, around 4-5 minutes. Then, add the green chillies (whole or slit) and sauté for another minute. The green chillies will add a mild heat, balancing the flavors of the dish.

  5. Add the Cooked Vegetables:
    Now, incorporate the cooked chow chow and green beans into the pan. Sprinkle turmeric powder and a pinch of salt to taste. Gently toss everything together, allowing the vegetables to absorb the spices. Cook for another 5-6 minutes, ensuring that the ingredients are well-mixed and heated through.

  6. Finish with Grated Coconut:
    Once the vegetables are cooked and well-spiced, add the freshly grated coconut. Stir to combine and cook for another minute or two. The coconut will add a subtle sweetness and a creamy texture, enriching the overall dish.
