Description:

If you’re a fan of the vibrant flavor of cilantro, you’re in for a treat with this quick and easy breakfast dish. Perfect for those mornings when you need something tasty but don’t have a lot of time to spare, these cilantro eggs are a delicious way to start your day. Inspired by a need to use up perishables before a trip, this recipe is a testament to creativity in the kitchen!

Ingredients:

  • 2 eggs
  • 2 to 4 tablespoons chopped cilantro
  • 1 celery rib, finely chopped
  • 2 tablespoons salsa
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Parmesan cheese (optional)
  • Toast, for serving

Instructions:

Step Description
1 In a bowl, mix together the chopped cilantro, finely chopped celery, salsa, ranch dressing, and season with salt and pepper to taste. Set aside.
2 Poach the eggs: Fill a saucepan with water and bring it to a gentle simmer. Crack the eggs into separate small bowls or ramekins. Create a gentle whirlpool in the simmering water with a spoon and carefully slide the eggs into the water, one at a time. Cook for about 3-4 minutes for soft poached eggs or longer for firmer yolks.
3 While the eggs are poaching, toast your bread until golden brown.
4 Once the eggs are done, carefully remove them from the water with a slotted spoon and drain on a paper towel.
5 To assemble, place a slice of toast on each plate. Spoon the cilantro mixture over the toast.
6 Top each toast with a poached egg.
7 If desired, sprinkle with Parmesan cheese for an extra burst of flavor.
8 Serve immediately and enjoy your delicious cilantro eggs!
