Ricotta Mousse with Apples and Cinnamon

Ricotta cheese (cow’s milk) 400g
Heavy cream (liquid) 200g
Powdered sugar 70g
Fuji apples 350g
Brown sugar 60g
Water 2 tablespoons
Ground cinnamon to taste

Instructions:

  1. Drain the Ricotta:
    Begin by placing the ricotta cheese in a fine sieve over a bowl, allowing it to drain for about an hour. This step ensures that the ricotta is as dry as possible, giving your mousse a smooth texture.

  2. Prepare the Apples:
    While the ricotta drains, peel and core the apples. Cut them into wedges, then into thin slices, and finally into small cubes.

  3. Cook the Apples:
    In a medium skillet, heat the apples over medium-high heat along with the brown sugar. Stir the mixture occasionally and cook for about 15 minutes until the apples are soft and caramelized. Set aside to cool.

  4. Make the Ricotta Mousse:
    Once the ricotta has drained, transfer it to a large bowl and add the powdered sugar. In a separate bowl, whip the heavy cream using electric beaters until stiff peaks form. Gently fold the whipped cream into the ricotta mixture, ensuring that it remains light and airy.

  5. Assemble the Dessert:
    Transfer the mousse into a piping bag. For serving, take four transparent dessert cups (approximately 200 ml capacity each). Start by piping a layer of ricotta mousse at the bottom of each cup, followed by a spoonful of the caramelized apples.

  6. Finish and Serve:
    Repeat the layers, ending with a layer of mousse on top. If desired, you can sprinkle a pinch of ground cinnamon on top for added flavor and presentation. Chill the mousse in the refrigerator for at least 2 hours before serving.
