  • 3 cups 2% low-fat milk
  • 1 cinnamon stick

  • Peel of oranges
  • Peel of lemon
  • 3/4 cup sugar
  • 1/4 cup raisins

Instructions:

Step Description
1 Heat the 2% low-fat milk and cinnamon stick in a small saucepan over medium heat until the milk is infused with the flavor of cinnamon, approximately 15 minutes.
2 In a 2 to 3-quart saucepan, combine the rice, water, and salt. Bring the mixture to a boil, stirring occasionally.
3 Place the peel of oranges on top of the rice.
4 Reduce the heat, cover the saucepan, and allow the mixture to simmer for about 15 minutes or until the rice becomes tender and the liquid is absorbed.
5 Remove and discard the orange peel.
6 Strain the infused milk and stir it into the cooked rice.
7 Add sugar to the mixture and simmer for an additional 20 minutes or until the mixture thickens, stirring often to prevent burning.
8 After 20 minutes, add the raisins to the mixture and continue to simmer for an additional 10 minutes.
9 Serve the rice pudding hot, and enjoy its delightful flavors!
10 To reheat leftovers, simply add a little milk to restore the creamy texture.
