Instructions:
- Preheat Oven: Heat your oven to 350 degrees Fahrenheit.
- Prepare Pan: Grease a 10″ x 4″ tube pan to prevent sticking.
- Prepare Cinnamon-Nut Mixture: In a small bowl, mix together brown sugar, chopped walnuts, chopped hazelnuts, and ground cinnamon. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, beat together the butter, sugar, eggs, vanilla extract, and light molasses using an electric mixer. Beat for about 2 minutes on medium speed until the mixture is creamy and well combined.
- Combine Dry Ingredients: In a separate bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
- Alternate Mixing: Gradually add the dry flour mixture and the sour cream to the butter-sugar mixture, alternating between the two until all ingredients are well combined. Mix until you have a smooth batter.
- Layer Batter and Cinnamon-Nut Mixture: Spread one-third of the batter evenly into the prepared tube pan. Sprinkle one-third of the cinnamon-nut mixture over the batter. Repeat this layering process two more times until all the batter and cinnamon-nut mixture are used up.
- Bake: Place the pan in the preheated oven and bake for 55-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Serve: Once baked, allow the Shoo-Fly Coffee Cake to cool in the pan for about 10-15 minutes before removing it from the pan and transferring it to a wire rack to cool completely. Slice and serve this delicious cake with your favorite hot beverage for a delightful treat!
