Found on the back of Clabber Girl baking powder, these doughnut muffins are a delightful treat for any occasion. Whether it’s breakfast, brunch, or a snack, these muffins are sure to please. They freeze beautifully, making them a convenient option for busy mornings or unexpected guests.

Ingredients:

  • 1 egg
  • 1/3 cup milk
  • 1/2 cup flour
  • 1 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup baking powder
  • 2 tbsp sugar (for batter)
  • 3 tbsp sugar (for topping)
  • 3 tsp cinnamon (for topping)
  • Butter, for topping

Instructions:

  1. Preparation:

    • Preheat your oven to 400°F (200°C).
    • Grease a 12-cup muffin tin or line with paper liners.
  2. Prepare the Batter:

    • In a mixing bowl, beat the egg until light and fluffy.
    • Add in the oil and milk, continuing to beat until well combined. Set aside.
  3. Sift Dry Ingredients:

    • In a separate bowl, sift together the flour, nutmeg, salt, baking powder, and 2 tablespoons of sugar.
    • Gradually add the sifted dry ingredients into the egg mixture, stirring until just combined.
  4. Fill Muffin Cups:

    • Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  5. Prepare Topping:

    • In a small bowl, combine the remaining sugar and cinnamon.
    • Generously sprinkle the cinnamon-sugar mixture over the tops of each muffin.
  6. Add Butter:

    • Place a small dollop of butter on top of each muffin.
  7. Bake:

    • Bake in the preheated oven for 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Serve:

    • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
    • Serve warm or at room temperature. These muffins are best enjoyed fresh, but they can also be stored in an airtight container for a few days or frozen for longer preservation.
  9. Additional Notes:

    • For extra flavor, consider adding a couple of sprinkles of cinnamon to the batter before mixing.
    • To enhance the cinnamon flavor throughout the muffins, sprinkle a little of the cinnamon-sugar mixture on the bottom of each muffin cup before adding the batter.

These doughnut muffins are a delightful combination of fluffy texture and sweet, cinnamon-spiced goodness, making them a perfect treat for any time of day. Enjoy! 🍩🧁
