Instructions
Step 1: Prepare the Apple Puree
- Begin by making the apple puree. In a small saucepan, combine 40g of water and 80g of granulated sugar. Heat over medium-low heat, stirring constantly to dissolve the sugar, until the mixture is smooth and free from any clumps. Once the sugar has dissolved, allow the syrup to cool down.
- While the syrup is cooling, wash and dry the green apples. Slice them in half and remove the cores. Using a melon baller or an apple corer, scoop out small round balls of apple flesh.
- Combine the apple balls with the cooled syrup. You will need about 80g of this apple-syrup mixture for each serving cup. Divide the mixture evenly among six small serving glasses or cups. This will form the base layer.
- Place the filled cups in the fridge and allow them to set for 30 minutes.
Step 2: Prepare the Grapefruit Puree
- For the grapefruit layer, start by preparing a fresh syrup. In a saucepan, combine 70g of water and 60g of granulated sugar. Heat gently, stirring until the sugar dissolves. Remove from heat and allow to cool.
- To peel and segment the pink grapefruit, cut off both ends of the fruit, then carefully remove the outer peel and the white pith using a sharp knife. Once peeled, slice between the membranes to release the juicy segments. Discard any seeds or membranes.
- Place the grapefruit segments in a blender or food processor and blend until smooth. Once the mixture is pureed, slowly pour in the cooled syrup, blending again to combine thoroughly.
- After 30 minutes of chilling, take the apple-filled cups out of the fridge. Carefully pour 80g of the grapefruit puree over each apple base, ensuring an even layer on top.
- Return the cups to the fridge and allow them to set for another 30 minutes or until firm.
Step 3: Prepare the Caramelized Amaretti and Garnish
- While the cups chill, prepare the caramelized amaretti topping. In a small skillet, add 100g of brown sugar and 40g of water. Heat over medium heat, stirring occasionally, until the sugar dissolves and begins to thicken into a syrupy consistency.
- Break the amaretti biscuits into small crumbs with your hands and add them to the caramelized sugar mixture. Stir well to ensure the crumbs are evenly coated in the syrup. Continue to cook for another 2-3 minutes until the mixture becomes thick and the amaretti are lightly caramelized.
- Remove from heat and allow the mixture to cool slightly.
Step 4: Assemble the Cups
- Once the cups are fully set, take them out of the fridge and top each with a generous sprinkle of the caramelized amaretti crumbs.
- For an extra burst of freshness, garnish the cups with small pieces of caramelized apple balls and a sprinkle of freshly grated grapefruit zest. If desired, you can also add some thin strips of green apple peel for a decorative touch.
- Serve the Apple and Grapefruit Cups chilled and enjoy!
