Citrus Pesto Bavette

Instructions:

  1. Prepare the Citrus Fruits:
    Begin by peeling the citrus fruits. Using a sharp knife, trim off the ends of the oranges and lemons. Carefully remove the peel, ensuring you also remove the bitter white pith. Next, cut out the segments (also known as “pelare a vivo”), removing any remaining membranes. Collect the segments and set them aside.

  2. Prepare the Pesto:
    In a blender or food processor, combine the fresh basil leaves, pine nuts, Grana Padano cheese, and the citrus segments (both orange and lemon). Add a pinch of salt and a few cracks of black pepper. Slowly drizzle in the olive oil while blending to create a smooth, creamy pesto. Adjust seasoning if necessary.

  3. Cook the Pasta:
    In a large pot, bring salted water to a boil. Add the linguine (or bavette, if available) and cook until al dente, according to package instructions. Be sure to stir occasionally to prevent the pasta from sticking.

  4. Combine Pasta and Pesto:
    While the pasta is cooking, heat the citrus pesto in a large skillet or sauté pan over low heat. Once the pasta is ready, drain it, reserving a small cup of pasta water. Transfer the hot pasta directly into the pan with the pesto.

  5. Toss and Serve:
    Toss the pasta in the pesto, adding a bit of reserved pasta water if necessary to help coat the noodles evenly. Stir for a few minutes to ensure everything is well combined. Taste and adjust seasoning with more salt and pepper if desired.

  6. Finish and Enjoy:
