Ingredients:

  • 1 1/2 cups powdered sugar
  • 1 cup butter
  • 1 tablespoon almond flavored liqueur
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 egg
  • Zest of 1 orange
  • 24 whole almonds

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. Beat powdered sugar and butter in a large bowl with an electric mixer at medium speed until light and fluffy.

  3. Add orange peel and almond liqueur to the butter mixture and continue beating until well combined.

  4. Set aside 24 whole almonds for topping the cookies.

  5. Place the remaining almonds in a food processor and pulse until finely ground, but not pasty.

  6. In a separate bowl, combine the ground almonds, flour, and salt. Stir until well mixed.

  7. Gradually add the flour mixture to the butter mixture, beating at low speed until well blended.

  8. Transfer the dough onto a lightly floured surface and roll it out to just under 1/4-inch thickness using a floured rolling pin.

  9. Cut the dough into shapes using a floured 2 1/2-inch fluted or round cookie cutter.

  10. Place the cut-out dough onto ungreased cookie sheets, about 2 inches apart.

  11. Lightly brush the tops of the cookies with beaten egg.

  12. Press one whole reserved almond into the center of each cookie.

  13. Lightly brush the almond with beaten egg.

  14. Bake in the preheated oven for 10 to 12 minutes or until the cookies are light golden brown.

  15. Allow the cookies to stand for 1 minute on the cookie sheets before transferring them to wire racks to cool completely.

  16. Once cooled, store the cookies tightly covered at room temperature, or freeze for up to 3 months.

Notes:

  • To toast almonds, spread in a single layer on a baking sheet and bake in a preheated 350°F (175°C) oven for 8 to 10 minutes or until brown, stirring twice.
